Gichuru started hosting pop-up pizza nights out, on the terrace of a small building in the suburb town of Ngong in 2009. Lured by freshly made pies featuring tomatoes, peppers, onions, and basil from his family's one-acre garden—as well as hand-crafted dough and meats of pastured cows from local Masaai butchers, visitors to the Ch! with an inverted 'i' were seeking out both dinner and an experience. Traveling upwards of two hours from Nairobi to eat pizza (whilst Ngong-road was unbearably narrow & riddled with traffic back then), most never complained.

“It’s not just a meal, it’s a destination,” says Gichuru. “People come here to relax and enjoy the setting, not to grab a meal and run.”

"When the sun sets behind the scenic Ngong Hills, the light bathes everything in beautiful magenta tones, you cannot admire the breathtaking spectacle whilst indulging in the restaurant's mouth-watering highlights and fail to feel the strong life force energy. The white-settler community and the tourists loved it, the locals made it popular, fast-forward nine years later and the restaurant's 7 branches bake 300 pizzas in four hours.
